Instructions
First, prepare the spätzle dough. Finely chop the fresh wild garlic. In a large bowl, combine the flour, eggs, water, and a pinch of salt. Mix well to form a smooth, somewhat thick dough. Fold in the chopped wild garlic. Let the dough rest for about 10-15 minutes.
Bring a large pot of salted water to a boil. Using a spätzle maker or a cutting board and knife, press or scrape the dough into the boiling water in small pieces. Cook the spätzle in batches until they float to the surface (this usually takes 1-2 minutes). Remove them with a slotted spoon and rinse briefly with cold water to prevent sticking.
