- 300 gCorned beef(canned or fresh)
- 200 gPickled beets(drained)
- 150 gOnion(finely chopped)
- 50 gButterMilch
- 100 mlMilk(warm)
- 2 tbspPickle brine(from pickled beets or gherkins)
- 1 Prise(n)Salt(to taste)
- 1 Prise(n)Black pepper(freshly ground, to taste)
- 4 itemFried eggs(for serving)
- 4 itemPickled gherkins(for serving)
- 100 gRollmops (pickled herring fillets)(for serving)
Instructions
Peel the potatoes, cut them into equally sized pieces, and boil them in salted water until very tender (about 20-25 minutes).
While the potatoes are cooking, finely chop the onion. Melt the butter in a large pan and sauté the chopped onion until translucent, but not browned.
Drain the corned beef well and shred it with a fork, or chop it finely if using fresh corned beef. Add it to the pan with the onions and heat through briefly.
Drain the cooked potatoes and mash them thoroughly with a potato masher or a fork. Gradually add the warm milk and pickle brine, mixing until you have a smooth, creamy consistency. Do not use an electric mixer, as this can make the potatoes gummy.
Finely chop the pickled beets. Add the corned beef and onion mixture, along with the chopped beets, to the mashed potatoes. Mix everything well until combined. The Labskaus should have a vibrant pink color.
Season the Labskaus generously with salt and freshly ground black pepper to taste. Heat it gently in the pot or pan, stirring occasionally, until it's warmed through.
Serve the hearty Labskaus immediately, topped with a fried egg. Garnish with pickled gherkins and rollmops on the side.
