Instructions
Heat 1 tbsp olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat and set the beef aside.
In the same pot, add the chopped onion, diced carrots, and diced celery. Sauté for 5-7 minutes until the vegetables soften.
Add the minced garlic and tomato paste to the pot. Cook for another 1-2 minutes, stirring constantly, until fragrant.
Pour in the red wine and bring it to a simmer, scraping up any browned bits from the bottom of the pot. Let it simmer for 5 minutes until the wine has reduced by about half.
Return the browned ground beef to the pot. Stir in the crushed tomatoes, beef broth, dried oregano, dried basil, and bay leaf. Season with salt and pepper to taste.
Bring the sauce to a gentle simmer, then reduce the heat to low, cover, and let it cook for at least 1.5 to 2 hours, stirring occasionally. The longer it simmers, the more flavor it will develop. If the sauce becomes too thick, you can add a little more beef broth or water.
About 15 minutes before the sauce is ready, cook the spaghetti according to package directions in a large pot of salted boiling water until al dente.
Remove the bay leaf from the Bolognese sauce. Taste and adjust seasoning if necessary.
Drain the spaghetti and divide it among serving plates. Top generously with the hearty Bolognese sauce. Garnish with freshly grated Parmesan cheese and chopped fresh parsley.
