Instructions
Pat the veal cutlets dry with paper towels. Place each cutlet between two sheets of plastic wrap and pound them evenly to about 1/4 inch (0.5 cm) thickness using a meat mallet or rolling pin.
Set up a breading station: Place the flour in a shallow dish, whisk the eggs in a second shallow dish, and place the panko breadcrumbs in a third shallow dish. Season the flour lightly with salt and pepper.
Dredge each cutlet first in the seasoned flour, shaking off any excess. Then dip it into the beaten egg, ensuring it's fully coated. Finally, press it firmly into the panko breadcrumbs, making sure the entire surface is covered.
Place the breaded schnitzel in a single layer in the air fryer basket, ensuring not to overcrowd it. You may need to cook them in batches.
Air fry for 8-12 minutes, flipping halfway through, until the schnitzel is golden brown and crispy, and the internal temperature reaches 160°F (71°C). Cooking time may vary depending on your air fryer model and schnitzel thickness.
