- 300 gwide egg noodles
- 1 kgwhite cabbage
- 200 gsmoked bacon(diced)
- 2 tbspvegetable oil
- 1 mediumonion(finely chopped)
- 1 tspcaraway seeds
- 1 pinchsugar
- 1 tspapple cider vinegar
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(freshly ground, to taste)
- 2 tbspfresh parsley(chopped, for garnish)
Instructions
Cook the wide egg noodles according to package directions until al dente. Drain well and set aside.
While the noodles are cooking, prepare the cabbage. Remove the outer leaves of the white cabbage, quarter it, remove the core, and finely slice it.
In a large skillet or Dutch oven, render the diced smoked bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, reserving the bacon fat in the pan.
Add the vegetable oil to the pan with the bacon fat (if needed, add more oil). Add the finely chopped onion and sauté until translucent, about 3-5 minutes.
Add the sliced white cabbage and caraway seeds to the pan. Cook over medium-high heat, stirring occasionally, until the cabbage softens and starts to brown, about 10-15 minutes. Add the pinch of sugar to help with caramelization.
Stir in the apple cider vinegar. Season generously with salt and freshly ground black pepper to taste. Continue to cook for a few more minutes until the cabbage is tender-crisp.
Add the cooked noodles and the crispy bacon back into the pan with the cabbage. Toss everything together thoroughly until well combined and heated through. Taste and adjust seasoning if necessary.
