- 4 slicesFarmer's bread (rye bread)
- 2 tbspButterMilch
- 8 slicesCooked ham(thickly sliced)
- 4 largeEggs
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(freshly ground, to taste)
- 2 tbspFresh chives(finely chopped, for garnish)
Instructions
Heat 1 tablespoon of butter in a large non-stick skillet over medium heat.
Add the slices of farmer's bread to the skillet and toast them until golden brown and crispy on both sides, about 2-3 minutes per side. Remove from the skillet and set aside.
Place the ham slices in the same skillet and fry them gently for 1-2 minutes until slightly warmed and fragrant. Remove and set aside.
Add the remaining 1 tablespoon of butter to the skillet. Once melted, crack the eggs into the skillet. Fry them to your desired doneness – typically sunny-side up with firm whites and a runny yolk, about 3-4 minutes.
Season the fried eggs with salt and freshly ground black pepper to taste.
To assemble, place two slices of ham on each toasted bread slice. Carefully top each with a fried egg.
Garnish with fresh chopped chives and serve immediately.
💡 Tipp
Varianten
- Add a dash of paprika for extra flavor.
- Serve with a few slices of pickled gherkins on the side.
- Substitute cooked ham with crispy bacon or flavorful Black Forest ham.
Ersatz & Alternativen
- Use sourdough bread instead of farmer's bread for a tangier flavor.
- For a vegetarian version, omit the ham and add sliced avocado or grilled mushrooms.
Aufbewahrung
Strammer Max is best enjoyed fresh. Leftovers can be stored in an airtight container in the refrigerator for up to 1 day, but the texture will change.
Einfrieren
This dish is not suitable for freezing, as the eggs and bread will not hold their texture well.
