- 400 mlFull-fat coconut milk
- 200 mlCanned coconut cream
- 250 gFresh pineapple(cubed)
- 60 mlFresh pineapple juice
- 30 mlLime juice
- 50 gGranulated sugar(or to taste)
- 1 tspVanilla extract
- 1 Prise(n)Salt(to taste)
- gShredded coconut(toasted, for garnish (optional))
Instructions
Combine the full-fat coconut milk, coconut cream, cubed fresh pineapple, pineapple juice, lime juice, granulated sugar, vanilla extract, and a pinch of salt in a high-speed blender.
Blend until the mixture is completely smooth and creamy. Taste and adjust sugar or lime juice if needed.
Pour the mixture evenly into popsicle molds. If desired, sprinkle some toasted shredded coconut into each mold before adding the liquid, or save it for garnish.
Insert popsicle sticks into each mold. Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.
To remove the popsicles, run the molds under warm water for a few seconds. Gently pull on the sticks to release. Serve immediately, optionally garnished with more toasted shredded coconut.
