- 100 gfresh wild garlic leaves
- 50 gwalnuts(lightly toasted)
- 50 gParmesan cheese(freshly grated)Milch
- 120 mlextra virgin olive oil
- 1 tbsplemon juice(freshly squeezed)
- 0.5 tsplemon zest
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(freshly ground, to taste)
Instructions
Wash the wild garlic leaves thoroughly and pat them dry with a kitchen towel. Roughly chop them.
Place the chopped wild garlic, toasted walnuts, grated Parmesan, lemon zest, and lemon juice into a food processor.
Pulse the ingredients a few times until roughly combined. Then, with the food processor running, slowly drizzle in the olive oil until you achieve a smooth, creamy consistency. You can adjust the amount of olive oil to your preferred thickness.
Season the pesto with salt and freshly ground black pepper to taste. Mix again briefly.
Transfer the pesto to a clean jar or container. Pour a thin layer of olive oil over the top to help preserve its freshness and color. Serve immediately or store in the refrigerator.
