- 75 gParmesan cheese(freshly grated)Milch

- 150 mlextra virgin olive oil
- 1 tsplemon juice

Instructions
Wash the wild garlic leaves thoroughly and pat them dry with a kitchen towel. Roughly chop them.
Place the chopped wild garlic, grated Parmesan, and toasted pine nuts into a food processor.
Pulse the ingredients a few times until coarsely chopped. Then, gradually add the olive oil while the processor is running, until you reach your desired consistency. Some prefer a chunkier pesto, others smoother.
Add the lemon juice, salt, and black pepper. Pulse briefly again to combine. Taste and adjust seasoning as needed.
Transfer the wild garlic pesto to a clean jar. Pour a thin layer of olive oil on top to prevent discoloration and preserve freshness. Store in the refrigerator.
