- 800 gbeef goulash(cut into 1-inch cubes)
- 3 tbspvegetable oil
- 500 gonions(finely chopped)
- 3 clovesgarlic(minced)
- 3 tbspsweet paprika powder
- tsphot paprika powder(optional, for extra spice)
- 1 tspcaraway seeds(whole or ground)
- 1 candiced tomatoes(400g / 14.5 oz)
- 1.2 Lbeef broth
- 200 gpotatoes(peeled and diced)
- 150 gcarrots(peeled and diced)
- 1 Prise(n)salt(to taste)
- 1 Prise(n)black pepper(freshly ground, to taste)
- 2 tbspfresh parsley(chopped, for garnish)
Instructions
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef goulash and sear it on all sides until nicely browned. Remove the meat from the pot and set aside.
Add the chopped onions to the same pot and sauté them over medium heat until translucent and softened, about 8-10 minutes. Do not let them brown too much.
Stir in the minced garlic, sweet paprika powder, hot paprika powder (if using), and caraway seeds. Cook for another minute, stirring constantly, making sure the paprika doesn't burn.
Return the seared beef to the pot. Add the diced tomatoes and beef broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for at least 1.5 to 2 hours, or until the beef is very tender. Stir occasionally.
After the beef has simmered for about 1.5 hours, add the diced potatoes and carrots to the pot. Continue to simmer, covered, for another 20-30 minutes, or until the vegetables are tender.
Season the goulash soup with salt and freshly ground black pepper to taste. If desired, you can add a little more paprika for color and flavor.
Ladle the hot goulash soup into bowls, garnish with fresh chopped parsley, and serve immediately. It pairs wonderfully with crusty bread or a dollop of sour cream.
