- 150 gCherry Tomatoes(halved)
- 100 gPeas(fresh or frozen)
- 1 eaZucchini(small, diced)
- 1 eaGarlic Clove(minced)
- 2 tbspOlive Oil
- 60 mlVegetable Broth
- 30 mlLemon Juice(freshly squeezed)
- 1 tspLemon Zest
- 30 gParmesan Cheese(freshly grated, plus more for serving)Milch
- 30 gFresh Parsley(chopped)
- 1 pinchSalt(to taste)
- 1 pinchBlack Pepper(freshly ground, to taste)
Instructions
Cook the pasta according to package directions until al dente. Reserve about 120 ml (½ cup) of the pasta water before draining. Set aside.
While the pasta cooks, heat the olive oil in a large skillet or pan over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
Add the diced zucchini and asparagus to the skillet. Cook for 3-5 minutes, stirring occasionally, until the vegetables are tender-crisp.
Stir in the cherry tomatoes and peas. Cook for another 2-3 minutes, just until the tomatoes begin to soften slightly and the peas are heated through.
Pour in the vegetable broth and lemon juice. Bring to a gentle simmer and cook for 1 minute.
Add the drained pasta to the skillet with the vegetables. Toss everything together. Stir in the lemon zest, grated Parmesan cheese, and chopped parsley.
If the sauce seems too dry, add a little of the reserved pasta water, 1-2 tablespoons at a time, until you reach your desired consistency.
Season with salt and freshly ground black pepper to taste. Serve immediately, garnished with extra Parmesan cheese and fresh parsley if desired.
