Instructions
Start by preparing your chili filling. Heat the olive oil in a skillet over medium heat. Add the finely diced onion and cook until softened, about 3-4 minutes.
Add the minced garlic and cook for another minute until fragrant. Then, add the ground beef and cook, breaking it up with a spoon, until it's browned all over. Drain any excess fat.
Stir in the passed tomatoes, kidney beans, corn, chili powder, and cumin. Season with salt and black pepper to taste. Bring to a simmer, then reduce the heat and let it cook for 5-7 minutes, allowing the flavors to meld and the mixture to thicken slightly.
While the chili is simmering, prepare your baguette. Carefully slice the baguette lengthwise, but not all the way through, so the two halves remain attached at the bottom. Then, make several crosswise cuts about 1 inch (2.5 cm) apart, again without cutting all the way through the bottom crust. You want to create pockets for the filling.
In a bowl, combine the shredded cheddar and mozzarella cheeses.
Carefully spoon the chili filling into the cuts and crevices of the baguette. Don't overfill, but make sure to get some into every pocket. Then, generously stuff the cheese mixture into all the same pockets, ensuring it's nestled among the chili.
Wrap the filled baguette tightly in aluminum foil. If you're cooking over a campfire, you can use a double layer of foil for extra protection. Ensure the foil is sealed well to prevent any cheese from escaping.
Place the foil-wrapped baguette directly onto the hot coals of your campfire, or on a grill grate over medium-hot coals. Cook for 15-20 minutes, turning occasionally, until the cheese is completely melted and bubbly, and the bread is warmed through and slightly crispy on the outside. Be careful not to burn it.
Carefully remove the baguette from the fire using tongs. Let it cool for a few minutes before unwrapping. Garnish with fresh chopped cilantro, if desired, and serve immediately. Enjoy your smoky, cheesy campfire delight!
