- 900 gBoneless, skinless chicken thighs
- 2 mlOlive oil
- 1 StückZucchini(medium, chopped)
- 1 StückYellow squash(medium, chopped)
- 200 gCherry tomatoes(halved)
- 1 StückRed onion(small, thinly sliced)
- 2 StückGarlic cloves(minced)
- 120 mlChicken broth
- 60 mlFresh lemon juice
- 1 StückLemon(zest only)
- 10 gFresh parsley(chopped)
- 5 gFresh oregano(chopped)
- 1 Prise(n)Salt(to taste)
- 1 Prise(n)Black pepper(to taste)
Instructions
Lightly grease the inside of your slow cooker with olive oil.
Place the chicken thighs in the bottom of the slow cooker.
Add the chopped zucchini, yellow squash, halved cherry tomatoes, and sliced red onion around and on top of the chicken.
In a small bowl, whisk together the minced garlic, chicken broth, fresh lemon juice, lemon zest, chopped parsley, and chopped oregano. Season with salt and black pepper to taste.
Pour the liquid mixture evenly over the chicken and vegetables in the slow cooker.
Cover and cook on low for 3-4 hours, or on high for 2-3 hours, until the chicken is cooked through and tender, and the vegetables are soft.
Before serving, you can gently shred the chicken with two forks directly in the slow cooker, or serve the thighs whole. Adjust seasoning if needed.
