- 150 gGranulated sugar
- 10 gBaking powder
- 1 Prise(n)Salt(to taste)
- 120 mlWhole milk
- 100 gUnsalted butter, meltedMilch
- 1 largeEgg
- 5 mlVanilla extract
- 200 gFresh blueberries
Crumble Topping
- 60 gAll-purpose flour
- 40 gGranulated sugar
- 40 gCold unsalted butter, cubedMilch
Instructions
Preheat your oven to 190°C (375°F). Line a 12-cup muffin tin with paper liners.
First, prepare the crumble topping: In a small bowl, combine 60g (1/2 cup) flour and 40g (3 tbsp) sugar. Add the cold, cubed butter. Use your fingertips or a pastry blender to cut the butter into the dry ingredients until coarse crumbs form. Set aside.
In a large bowl, whisk together the 250g (2 cups) flour, 150g (3/4 cup) sugar, baking powder, and salt.
In a separate medium bowl, whisk together the milk, melted butter, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are fine.
Gently fold in the fresh blueberries.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Sprinkle the prepared crumble topping generously over the top of each muffin.
Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean and the topping is golden brown. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
