Instructions
In a large bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar with an electric mixer until light and fluffy. This usually takes about 2-3 minutes.
Beat in the large egg and vanilla extract until well combined, scraping down the sides of the bowl as needed to ensure everything is incorporated.
In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt. Make sure these dry ingredients are thoroughly mixed.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix the dough.
Fold in the semi-sweet chocolate chips until they are evenly distributed throughout the cookie dough.
Cover the bowl with plastic wrap and chill the cookie dough in the refrigerator for at least 30 minutes. This helps prevent the cookies from spreading too much during cooking.
