- 400 gground beef
- 1 tbspvegetable oil
- 1 mediumonion(finely chopped)
- 2 clovesgarlic(minced)
- 2 mediumcarrots(diced)
- 2 stalkscelery(diced)
- 200 gpotatoes(peeled and diced)
- 1 candiced tomatoes(400g / 14.5 oz)
- 1.2 lbeef broth
- 150 ggreen beans(trimmed and cut into 1-inch pieces)
- 150 gfrozen peas
- 1 tspdried oregano
- 0.5 tspdried thyme
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(to taste)
- 2 tbspfresh parsley(chopped, for garnish)
Instructions
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the pot. Sauté for 3-5 minutes until the onion is softened and translucent.
Stir in the diced carrots, diced celery, and diced potatoes. Cook for another 5 minutes, stirring occasionally.
Pour in the diced tomatoes (undrained) and beef broth. Add the dried oregano and thyme. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the potatoes and carrots are tender.
Add the green beans and frozen peas to the soup. Continue to simmer for another 5-7 minutes, or until the green beans are tender-crisp. Do not overcook the vegetables.
Season the soup with salt and black pepper to taste. Ladle into bowls, garnish with fresh chopped parsley, and serve hot.
