Instructions
Preheat your grill to medium-high heat (375-400°F / 190-200°C).
Wash and peel the sweet potatoes. Cut them into 1/2-inch thick rounds or wedges. In a large bowl, toss the sweet potato pieces with 1 tablespoon of olive oil, salt, and pepper until evenly coated.
Grill the sweet potato slices for 4-6 minutes per side, or until tender and slightly charred. Remove from the grill and let cool slightly. Once cool enough to handle, dice them into bite-sized pieces.
While the sweet potatoes are cooling, prepare the dressing. In a blender or food processor, combine the ripe avocado, lime juice, 2 tablespoons of olive oil, minced garlic, salt, pepper, and optional cumin. Blend until smooth and creamy. Add a tablespoon or two of water if the dressing is too thick.
In a large serving bowl, combine the diced grilled sweet potatoes, finely diced red onion, and chopped fresh cilantro.
Pour the avocado-lime dressing over the sweet potato mixture and gently toss to combine. Ensure all ingredients are well coated with the dressing.
