Salad
- 400 gHalloumi cheese
- 500 gHokkaido pumpkin
- 150 gArugula
- 2 tbspOlive oil
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(to taste)
Dressing
- 4 tbspOlive oil
- 2 tbspLime juice
- 1 tbspHoney
- 1 bunchFresh mint
- 0.5 tspDijon mustard
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(to taste)
Instructions
Wash the Hokkaido pumpkin, remove the seeds, and cut it into approximately 1/2-inch thick slices. You don't need to peel it.
Heat 2 tablespoons of olive oil in a large pan or on a grill pan. Grill the pumpkin slices for about 3-5 minutes per side until they are tender and have nice grill marks. Season with salt and pepper and set aside.
Cut the halloumi cheese into 1/2-inch thick slices. Grill the halloumi slices in the same pan for about 2-3 minutes per side until golden brown and slightly crispy.
For the dressing, finely chop the fresh mint. In a small bowl, whisk together 4 tablespoons of olive oil, lime juice, honey, Dijon mustard, and the chopped mint. Season with salt and pepper to taste.
Wash the arugula and pat it dry. Arrange the arugula on a large platter or individual plates.
Arrange the grilled pumpkin and halloumi slices on top of the arugula.
Drizzle the mint-lime dressing generously over the salad. Serve immediately and enjoy!
