Salad
- 8 ozHalloumi cheese
- 2 mediumPeaches(firm ripe)
- 5 ozArugula
- 0.25 cupRed onion(thinly sliced)

Dressing
- 0.25 cupFresh mint leaves
- 3 tbspOlive oil(extra virgin)
- 2 tbspLime juice(freshly squeezed)
- 1 tspHoney
- 0.5 tspDijon mustard
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(freshly ground, to taste)
Instructions
First, prepare the mint dressing. Roughly chop the fresh mint leaves. In a small bowl, whisk together the extra virgin olive oil, lime juice, honey, Dijon mustard, chopped mint, salt, and pepper until well combined. Set aside.
Slice the halloumi cheese into 1/2-inch thick pieces. Pat them dry with a paper towel. Slice the firm ripe peaches into wedges or thick slices, removing the pit.
Heat a grill pan or outdoor grill to medium-high heat. Lightly brush the halloumi slices with 2 tablespoons of olive oil. Grill the halloumi for 2-3 minutes per side, or until golden brown and tender. Grill the peach slices for 1-2 minutes per side, until they have nice grill marks and are slightly softened.
In a large bowl, combine the arugula and thinly sliced red onion.
Arrange the grilled halloumi and peaches over the arugula and red onion mixture. Drizzle generously with the prepared mint dressing. Season with additional salt and freshly ground black pepper to taste.
Serve immediately and enjoy this refreshing and flavorful salad!
