Instructions
Prepare the halloumi: Slice the halloumi cheese into 1/2-inch thick pieces. You can grill them on a preheated grill or a grill pan over medium-high heat for 2-3 minutes per side, until golden brown and tender. Set aside to cool slightly.
Prepare the vegetables: Drain and rinse the canned chickpeas thoroughly. Dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion. Roughly chop the fresh mint and parsley.
Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and honey. Season with salt and black pepper to taste. Adjust to your preference.
Assemble the salad: In a large serving bowl, combine the chickpeas, diced cucumber, cherry tomatoes, and sliced red onion. Add the chopped fresh mint and parsley.
