- 250 gHalloumi cheese
- 500 gWatermelon(cubed)
- 0.5 cupFresh mint leaves(chopped)
- 2 tbspOlive oil
- 1 tbspLime juice
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(freshly ground, to taste)
Instructions
Cut the halloumi cheese into 1/2-inch thick slices.
Heat a grill pan or outdoor grill to medium-high heat. Lightly brush the halloumi slices with a little olive oil to prevent sticking.
Grill the halloumi for 2-3 minutes per side, or until golden brown and tender. Set aside to cool slightly.
In a large bowl, combine the cubed watermelon and chopped fresh mint.
Once the halloumi has cooled enough to handle, cut it into bite-sized pieces.
Add the grilled halloumi to the bowl with the watermelon and mint.
In a small bowl, whisk together the remaining olive oil, lime juice, salt, and black pepper to create the dressing.
Pour the dressing over the salad ingredients and gently toss to combine. Serve immediately.
