- 14.5 ozCanned diced tomatoes(undrained)
- 2 cupsBeef broth
- 1 tbspTomato paste
- 1 leafBay leaf

Instructions
Pat the beef cubes dry with paper towels. Season generously with salt and pepper.
Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the beef in batches on all sides until nicely caramelized. Remove the beef and set aside.
Add the chopped onions to the pot and sauté until softened and translucent, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
Stir in the sweet paprika, smoked paprika, caraway seeds, and cayenne pepper. Cook for 1 minute, stirring constantly, being careful not to burn the spices.
Deglaze the pot with red wine (if using), scraping up any browned bits from the bottom. Let it simmer for 2 minutes.
Return the beef to the pot. Add the diced tomatoes, beef broth, tomato paste, and bay leaf. Stir well to combine.
Bring the goulash to a gentle simmer, then reduce heat to low, cover, and cook for at least 2 to 2.5 hours, or until the beef is fork-tender. Stir occasionally to prevent sticking.
Remove the bay leaf. Taste and adjust seasoning with salt and pepper as needed. If the sauce is too thin, you can simmer it uncovered for a bit longer, or thicken it with a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water).
Serve hot with your favorite side dishes like noodles, mashed potatoes, or crusty bread.
