- 900 gPotatoes(peeled and grated)
- 1 mediumOnion(finely grated)
- 2 largeEggs
- 60 gAll-purpose flour
- 1 teaspoonSalt
- 0.5 teaspoonBlack pepper
- 1 pinchNutmeg(freshly grated)
- 200 mlVegetable oil(for frying)
Instructions
Peel and grate the potatoes and onion. Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as possible. This step is crucial for crispy potato pancakes.
In a large bowl, combine the squeezed potatoes and onion with the eggs, flour, salt, pepper, and nutmeg. Mix well until everything is evenly combined.
Heat the vegetable oil in a large skillet over medium-high heat. The oil should be hot enough that a small drop of batter sizzles immediately.
Spoon about 2-3 tablespoons of the potato mixture per pancake into the hot oil. Flatten them slightly with the back of the spoon to form thin patties.
Fry the potato pancakes for 3-5 minutes per side, or until golden brown and crispy. Work in batches to avoid overcrowding the pan.
Once cooked, transfer the potato pancakes to a plate lined with paper towels to drain any excess oil.
Serve immediately with apple sauce, sour cream, or herb quark.
