Vanilla Bean Cake
- 350 gAll-purpose flour

Instructions
Preheat your oven to 175°C (350°F). Grease and flour two 20 cm (8-inch) round cake pans. Line the bottoms with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and vanilla bean seeds.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
To make the buttercream, beat the softened butter in a large bowl with an electric mixer until creamy. Gradually add the powdered sugar, about a third at a time, beating until smooth after each addition.
Add the heavy cream, vanilla extract, and salt. Beat on high speed for 3-5 minutes until the buttercream is light and fluffy.
Once the cakes are completely cool, level them if necessary. Place one cake layer on your serving plate or cake stand. Spread a generous layer of buttercream over the top.
Place the second cake layer on top and cover the entire cake with a thin crumb coat of buttercream. Chill in the refrigerator for 15-20 minutes to set.
Apply the remaining buttercream to the cake, smoothing the sides and top with an offset spatula or bench scraper.
For the diploma scroll, roll out the white fondant on a lightly powdered sugar-dusted surface into a rectangle about 15 cm x 20 cm (6 inches x 8 inches).
Gently roll up both short ends of the fondant rectangle to meet in the middle, creating a scroll shape. Use the black edible food marker to write "Diploma" or the graduate's name and graduation year on the scroll.
Carefully place the fondant diploma scroll on top of the frosted cake. You can add other decorations like edible pearls or sprinkles if desired.
