Instructions
First, prepare the quinoa. Rinse the quinoa thoroughly under cold water. Combine quinoa and vegetable broth in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until all liquid is absorbed and the quinoa is fluffy. Season with salt and pepper to taste. Set aside.
While the quinoa cooks, prepare the chicken. Cut the chicken breast into thin strips. In a bowl, toss the chicken strips with paprika powder, cumin, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Add the chicken strips and cook for 5-7 minutes, or until golden brown and cooked through. Set aside.
Next, make the mango salsa. Peel and dice the mango. Finely chop the red onion and cilantro. In a small bowl, combine the diced mango, red onion, cilantro, and lime juice. Season with salt and pepper to taste. Mix well.
To assemble the bowls, divide the mixed greens between two bowls. Top with the cooked quinoa, chicken strips, and a generous portion of mango salsa. Slice the avocado and add it to each bowl.
