Instructions
Wash and peel the potatoes. Using a mandoline slicer or a very sharp knife, thinly slice the potatoes into uniform rounds, about 1/16 inch (1.5 mm) thick.
Place the potato slices in a large bowl of cold water for at least 15 minutes to remove excess starch. This helps ensure crispiness. Drain the potatoes and pat them thoroughly dry with paper towels or a clean kitchen towel. It's crucial they are as dry as possible.
In a large bowl, toss the dried potato slices with olive oil, chopped rosemary, sea salt, and black pepper until evenly coated.
