Instructions
Wash and peel the potatoes. Using a mandoline slicer or a very sharp knife, thinly slice the potatoes into uniform rounds, about 1/16 inch (1.5 mm) thick.
Place the potato slices in a large bowl of cold water for at least 15 minutes to remove excess starch. This helps ensure crispiness. Drain the potatoes and pat them thoroughly dry with paper towels or a clean kitchen towel. It's crucial they are as dry as possible.
In a large bowl, toss the dried potato slices with olive oil, chopped rosemary, sea salt, and black pepper until evenly coated.
Arrange a single layer of potato slices in the air fryer basket, ensuring they do not overlap. Cook for 10-15 minutes, shaking the basket every 5 minutes, until the chips are golden brown and crispy. Cooking times can vary based on your air fryer model and potato thickness.
Remove the crispy chips from the air fryer and place them on a wire rack to cool slightly. As they cool, they will become even crispier. Repeat with the remaining potato slices.
