- 1 smallOnion(finely chopped)

Instructions
Wash and peel the potatoes. Cut them into approximately 1-inch (2.5 cm) cubes. For extra crispiness, you can parboil the potato cubes in salted water for 5 minutes, then drain and let them steam dry completely.
In a large bowl, toss the potato cubes with 1 tbsp olive oil, 1 tsp smoked paprika, 0.5 tsp garlic powder, salt, and pepper until evenly coated.
Air fry for 18-25 minutes, shaking the basket every 5-7 minutes, until the potatoes are golden brown and crispy. Cooking time may vary depending on your air fryer model and potato size.
While the potatoes are cooking, prepare the bravas sauce. Heat 1 tbsp olive oil in a saucepan over medium heat. Add the finely chopped onion and sauté until softened, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant. Stir in the canned chopped tomatoes, tomato paste, 1 tsp smoked paprika, cayenne pepper, and sugar. Bring to a simmer.
Reduce the heat to low, cover, and let the sauce simmer for 10-15 minutes, stirring occasionally, until it has thickened slightly. Stir in the red wine vinegar, then season with salt and pepper to taste.
Once the potatoes are done, transfer them to a serving dish. Spoon the warm bravas sauce generously over the crispy potatoes. Garnish with fresh chopped parsley and serve immediately.
