Instructions
Prepare the sausages: Lightly brush the bratwurst sausages with vegetable oil. Using a sharp knife, make a few shallow diagonal cuts on each sausage. This helps them cook evenly and get extra crispy.
Air fry the sausages: Preheat your air fryer to 375°F (190°C). Place the sausages in a single layer in the air fryer basket. Air fry for 12-15 minutes, flipping halfway through, until they are golden brown and cooked through. The internal temperature should reach 160°F (71°C).
Start the curry sauce: While the sausages are cooking, melt the butter in a medium saucepan over medium heat. Add the finely chopped onion and sauté until softened, about 3-5 minutes.
Add aromatics and spices: Stir in the minced garlic, curry powder, smoked paprika, and cayenne pepper. Cook for another minute, stirring constantly, until fragrant. Be careful not to burn the spices.
Simmer the sauce: Pour in the crushed tomatoes, vegetable broth, apple cider vinegar, brown sugar, and Worcestershire sauce. Bring the sauce to a gentle simmer, then reduce the heat to low and let it cook for 10-15 minutes, stirring occasionally, allowing the flavors to meld and the sauce to thicken slightly.
Season and blend (optional): Season the sauce with salt and black pepper to taste. For a smoother sauce, you can carefully blend it with an immersion blender until it reaches your desired consistency. If you don't have an immersion blender, you can transfer it to a regular blender (be cautious with hot liquids) or just enjoy it chunky.
Serve: Once the sausages are cooked, remove them from the air fryer and slice them into bite-sized pieces. Arrange the sliced sausages on plates, generously spoon the warm curry sauce over them, and garnish with fresh chopped parsley. Serve immediately with a side of fries or a crusty roll.
