- 2.2 poundswaxy potatoes(such as Yukon Gold or Red Bliss)
- 1 mediumonion
- 2 cupsbeef broth
- 0.5 cupwhite wine vinegar
- 0.25 cupvegetable oil
- 1 teaspoonDijon mustard
- 1 teaspoonsalt(to taste)
- 0.5 teaspoonblack pepper(freshly ground, to taste)
- 0.25 cupfresh chives(finely chopped, for garnish)
Instructions
Wash the potatoes thoroughly. Boil them in their skins in salted water until tender, about 20-25 minutes, depending on their size. You should be able to easily pierce them with a knife.
While the potatoes are cooking, peel and finely dice the onion.
In a small saucepan, bring the beef broth, white wine vinegar, vegetable oil, Dijon mustard, salt, and pepper to a gentle simmer. Do not boil vigorously.
Once the potatoes are cooked, drain them and let them cool slightly so you can handle them. Peel the potatoes while they are still warm.
Slice the warm, peeled potatoes into thin rounds (about 1/8 inch thick) and place them in a large bowl. Add the diced onion to the potatoes.
Pour the warm dressing over the sliced potatoes and onions. Gently toss everything together, being careful not to mash the potatoes. The potatoes should absorb the dressing.
Let the potato salad rest for at least 15-30 minutes for the flavors to meld. If it seems too dry, you can add a little more warm broth or vinegar to reach your desired consistency.
Taste and adjust seasoning if necessary. Garnish with freshly chopped chives just before serving. This potato salad is best served warm or at room temperature.
