- 0.25 cupFresh parsley(chopped, for garnish)

Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, minced garlic, diced celery, and diced carrots. Sauté for 5-7 minutes, until the vegetables are softened.
Stir in the dried oregano and dried basil, and cook for another minute until fragrant.
Add the diced tomatoes (undrained) and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat, cover, and simmer for 15 minutes to allow the flavors to meld.
Stir in the small pasta, cannellini beans, diced zucchini, and green beans. Cook for another 8-10 minutes, or until the pasta is al dente and the vegetables are tender.
Remove the pot from the heat and stir in the fresh spinach. The residual heat will wilt the spinach.
Season the minestrone with salt and freshly ground black pepper to taste. Ladle the soup into bowls, garnish with fresh chopped parsley, and serve with grated Parmesan cheese, if desired.
