- 250 mlBeef Broth
- 2 tbspChili Powder
- 1 tbspCumin
- 1 tspSmoked Paprika
- 0.5 tspCayenne Pepper(or to taste)
- 1 pinchSalt(to taste)
- 1 pinchBlack Pepper(to taste)
- 1 tbspTomato Paste
- tbspBrown Sugar(optional, for balancing acidity)
Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
Add the chopped onion, diced red and green bell peppers to the pot. Sauté for 5-7 minutes until the vegetables soften.
Stir in the minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper. Cook for 1 minute until fragrant, stirring constantly.
Add the tomato paste, crushed tomatoes, diced tomatoes, and beef broth to the pot. Stir well to combine.
Bring the chili to a simmer, then reduce heat to low, cover, and let it cook for at least 30 minutes, or up to 2 hours, stirring occasionally. The longer it simmers, the more the flavors will meld.
Stir in the drained and rinsed kidney beans and black beans. Continue to simmer for another 15-20 minutes, allowing the beans to heat through and absorb the flavors.
Season with salt and black pepper to taste. If the chili is too acidic, you can add a tablespoon of brown sugar to balance the flavors.
Serve hot with your favorite toppings like shredded cheese, sour cream, chopped fresh cilantro, or cornbread.
