For the Sauce
- 2 tbspUnsalted butterMilch
- 2 tbspAll-purpose flour
- 240 mlChicken broth
- 240 mlMilk(whole milk recommended)
- 120 mlHeavy cream
- 1 Prise(n)Nutmeg(freshly grated, to taste)

For the Vegetables
- 200 gCarrots
- 200 gCremini mushrooms
- 150 gFrozen peas
- 1 tbspFresh parsley(chopped, for garnish)
Instructions
Pat the chicken thighs dry and cut them into 1-inch pieces. Season generously with salt and pepper.
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook in batches until browned on all sides. Remove the chicken from the pot and set aside.
Reduce the heat to medium. Add the butter to the pot. Once melted, stir in the flour and cook for 1-2 minutes, stirring constantly, to create a roux. This will be the base for your creamy sauce.
Gradually whisk in the chicken broth, then the milk, ensuring there are no lumps. Bring the mixture to a gentle simmer, stirring frequently, until it begins to thicken.
Stir in the heavy cream and bring back to a simmer. Season the sauce with nutmeg, salt, and pepper to your liking.
Add the diced carrots and sliced mushrooms to the sauce. Cook for about 5-7 minutes, or until the vegetables start to soften.
Return the cooked chicken to the pot. Stir in the frozen peas. Continue to cook for another 5-10 minutes, or until the chicken is heated through and the peas are tender. Taste and adjust seasoning if needed.
Remove from heat and let it rest for a few minutes before serving. Garnish with fresh chopped parsley. Serve hot with rice, noodles, or mashed potatoes.
