- 200 gBeef Tenderloin(trimmed, very lean)
- 50 gArugula
- 50 gParmesan Cheese(freshly shaved or grated)Milch
- 3 tbspExtra Virgin Olive Oil
- 1 tbspLemon Juice(freshly squeezed)
- 1 cloveGarlic(minced)
- 1 tspDijon Mustard
- 1 pinchSalt(to taste)
- 1 pinchBlack Pepper(freshly ground, to taste)

Instructions
For easier slicing, wrap the beef tenderloin tightly in plastic wrap and freeze it for about 30-60 minutes until it's very firm but not completely frozen. This will allow you to slice it extremely thin.
Using a very sharp knife or a meat slicer, slice the beef tenderloin as thinly as possible. The slices should be almost translucent.
Arrange the beef slices in a single layer on chilled serving plates. If the slices are not perfectly thin, you can gently cover them with plastic wrap and lightly pound them with a meat mallet or the bottom of a pan to flatten them further.
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, salt, and freshly ground black pepper to create the dressing.
Drizzle the dressing evenly over the thinly sliced beef.
Scatter the fresh arugula leaves over the beef and dressing.
Top with generous shavings of Parmesan cheese. If desired, sprinkle capers over the carpaccio for an extra briny flavor.
