Instructions
Wash the asparagus thoroughly. Snap off the woody ends. If the asparagus spears are thick, you can peel the lower third. Cut the asparagus into pieces approximately 2-3 inches long.
Bring a pot of lightly salted water to a boil. Blanch the asparagus pieces for 3-5 minutes, depending on their thickness, until they are tender-crisp. Immediately transfer them to an ice bath to stop the cooking process and preserve their vibrant green color. Drain well.
For the vinaigrette, whisk together the olive oil, lemon juice, Dijon mustard, chopped parsley, chopped chives, and lemon zest in a small bowl. Season with salt and freshly ground black pepper to taste.
Cut the feta cheese into slices or cubes that are roughly the same size as your asparagus pieces, or slightly smaller, for easy stacking.
To assemble the stacks, alternate layers of blanched asparagus and feta cheese on serving plates. You can create small towers or arrange them artfully.
Drizzle the lemon herb vinaigrette generously over the asparagus and feta stacks. Garnish with a little extra fresh parsley and chives, if desired. Serve immediately as a fresh appetizer or a light main course.
