Instructions
Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package directions until al dente. Before draining, reserve 1 cup (240 ml) of the pasta cooking water.
While the pasta is cooking, prepare the sauce. In a large skillet or pot, melt the butter with the olive oil over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.
Stir in the lemon zest and lemon juice. Cook for another minute, allowing the flavors to meld.
Pour in the heavy cream and bring to a gentle simmer. Reduce the heat to low and stir in the grated Parmesan cheese until melted and smooth.
Add the cooked and drained pasta to the skillet with the sauce. Toss to coat the pasta evenly. If the sauce is too thick, add a splash or two of the reserved pasta cooking water until it reaches your desired consistency.
Season with salt and freshly ground black pepper to taste. Garnish with fresh chopped parsley and extra grated Parmesan cheese, if desired. Serve immediately.
