- 500 gpotatoes(floury variety)
- 100 gwild garlic
- 100 gall-purpose flour
- 1 pieceegg yolk
- 1 Pinchsalt(to taste)
- 1 Pinchblack pepper(freshly ground, to taste)
- 80 gbutterMilch
- 1 handfulfresh sage leaves
- 30 gpine nuts
- 2 tbspParmesan cheese(freshly grated, for serving)Milch
Instructions
Wash the potatoes thoroughly and boil them in their skins until tender. Drain, peel while still warm, and press through a potato ricer or mash very finely. Let cool slightly.
Wash the wild garlic, pat dry, and finely chop or blend into a paste. Add to the cooled mashed potatoes along with the flour, egg yolk, a pinch of salt, and pepper. Knead briefly to form a smooth dough. Do not overwork the dough, or the gnocchi will become tough.
Divide the dough into several portions. On a lightly floured surface, roll each portion into a long strand about 0.8 inches (2 cm) thick. Cut the strands into 0.8-inch (2 cm) pieces. You can gently press a fork onto each gnocchi to create ridges, which will help them hold the sauce.
Bring a large pot of salted water to a boil. Reduce the heat to a simmer and carefully add the gnocchi in batches. Cook for about 2-3 minutes, or until they float to the surface. Remove with a slotted spoon and drain well.
While the gnocchi are cooking, prepare the sage butter. Melt the butter in a large pan over medium heat. Add the fresh sage leaves and pine nuts. Cook until the butter is lightly browned and the sage leaves are crispy, and the pine nuts are golden brown and fragrant. Be careful not to burn the butter or sage.
Add the cooked gnocchi directly to the pan with the sage butter. Toss gently to coat. Season with a little more salt and pepper if needed.
Serve immediately, garnished with freshly grated Parmesan cheese.
