- 2 largeeggs
- 125 mlmilk
- 75 gall-purpose flour
- 1 pinchsalt(to taste)
For the Pancakes
- 1 tbspvegetable oil
For the Soup
- 1 Lbeef broth
- 2 tbspfresh chives(finely chopped, for garnish)
Instructions
First, prepare the pancake batter. In a bowl, whisk together the eggs, milk, flour, and a pinch of salt until smooth. Let the batter rest for about 10-15 minutes.
Heat a small amount of vegetable oil in a non-stick pan over medium heat. Pour a thin layer of batter into the pan, tilting to spread it evenly. Cook for 1-2 minutes per side until golden brown.
Repeat with the remaining batter until all pancakes are cooked. Stack the finished pancakes on a plate.
Once cooled slightly, roll the pancakes tightly and slice them into thin strips (about 0.2 inches or 0.5 cm wide). These are your 'Flädle'.
In a separate pot, heat the beef broth until it's simmering gently. Do not boil vigorously.
To serve, place a handful of the pancake strips into individual soup bowls. Ladle the hot broth over the pancake strips.
