Dressing

Instructions
Rinse the quinoa thoroughly under cold water. Combine quinoa, 400 ml of water, and a pinch of salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all water is absorbed. Let it sit covered for another 5 minutes, then fluff with a fork and set aside to cool.
While the quinoa cools, prepare the citrus. Cut the grapefruit and oranges into segments, removing all white pith and seeds. Dice the cucumber and finely slice the red onion. Roughly chop the fresh mint and parsley.
For the dressing, whisk together olive oil, lemon juice, maple syrup, salt, and black pepper in a small bowl until well combined.
Slice the halloumi into 1 cm (approximately 0.4 inch) thick pieces. Heat a non-stick pan or grill pan over medium-high heat. Grill the halloumi slices for 2-3 minutes per side, or until golden brown and slightly crispy.
In a large bowl, combine the cooled quinoa, citrus segments, diced cucumber, sliced red onion, chopped mint, and parsley. Pour the dressing over the salad and toss gently to combine.
