- 100 gFresh blueberries
- 100 gFresh raspberries
- 75 gGoat cheese(crumbled)
- 50 gPecans(toasted and chopped)
Dressing
- 60 mlOlive oil
- 30 mlFresh lemon juice
- 15 mlMaple syrup
- 5 gPoppy seeds
- 1 Prise(n)Salt(to taste)
- 1 Prise(n)Black pepper(freshly ground, to taste)
Instructions
First, prepare the lemon poppy seed dressing. In a small bowl, whisk together the olive oil, fresh lemon juice, maple syrup, poppy seeds, salt, and black pepper until well combined. Set aside.
Gently wash and dry the fresh spinach. Place it in a large salad bowl.
Wash and prepare the berries: halve or quarter the strawberries, and leave the blueberries and raspberries whole.
Add the prepared strawberries, blueberries, and raspberries to the salad bowl with the spinach.
Crumble the goat cheese over the salad ingredients.
Sprinkle the toasted and chopped pecans over the salad.
Just before serving, drizzle the lemon poppy seed dressing over the salad. Toss gently to ensure all ingredients are coated.
Serve immediately and enjoy your refreshing summer salad!
