- 0.5 cupfeta cheese(crumbled)
- 2 tbspfresh parsley(chopped)
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(to taste)
Instructions
Preheat your oven to 375°F (190°C). In a large bowl, whisk the eggs with salt and pepper until well combined. Set aside.
Heat the olive oil in a 10-inch oven-safe, non-stick skillet over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes.
Add the minced garlic, diced red bell pepper, and zucchini to the skillet. Sauté for 5-7 minutes, until the vegetables are tender-crisp. Stir in the halved cherry tomatoes and cook for another 2 minutes.
