- 0.5 cupcherry tomatoes(halved)
- 0.5 cupfeta cheese(crumbled)
- 2 tbspfresh parsley(chopped)
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(to taste)
Instructions
Preheat your oven to 375°F (190°C). In a large bowl, whisk the eggs with salt and pepper until well combined. Set aside.
Heat the olive oil in a 10-inch oven-safe, non-stick skillet over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes.
Add the minced garlic, diced red bell pepper, and zucchini to the skillet. Sauté for 5-7 minutes, until the vegetables are tender-crisp. Stir in the halved cherry tomatoes and cook for another 2 minutes.
Pour the whisked egg mixture evenly over the vegetables in the skillet. Sprinkle the crumbled feta cheese and chopped fresh parsley over the top.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden brown on top. The center should be firm when gently pressed.
