Marinade

Instructions
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Cut the chicken breast into 1-inch (2.5 cm) cubes. Core and deseed the bell peppers, then cut them into similar-sized pieces. Cut the zucchini into thick half-moon shapes or 1-inch (2.5 cm) chunks. Peel and quarter the red onion, then separate the layers.
In a large bowl, whisk together the olive oil, lemon juice, dried oregano, dried thyme, minced garlic, smoked paprika, salt, and black pepper to create the marinade.
Add the chicken pieces and all the chopped vegetables to the marinade. Toss everything until well coated. Cover the bowl and refrigerate for at least 30 minutes, or ideally 2-4 hours, to allow the flavors to meld. For best results, marinate overnight.
Thread the marinated chicken and vegetables alternately onto the skewers. You can create a pattern or thread them randomly, ensuring a mix of chicken and veggies on each skewer.
Preheat your grill to medium-high heat (about 400°F / 200°C). Lightly oil the grill grates to prevent sticking.
Place the skewers on the preheated grill. Grill for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp with nice grill marks. The internal temperature of the chicken should reach 165°F (74°C).
