Instructions
Rinse the quinoa thoroughly under cold water. In a medium saucepan, combine the rinsed quinoa and chicken broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed and the quinoa is fluffy. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and set aside to cool.
While the quinoa cooks, pat the chicken breasts dry. Season with a pinch of salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove from skillet, let rest for a few minutes, then shred or dice into bite-sized pieces.
In a large bowl, combine the cooled quinoa, shredded chicken, halved cherry tomatoes, diced cucumber, thinly sliced red onion, Kalamata olives, crumbled feta cheese, and chopped fresh parsley.
In a small bowl, whisk together the lemon juice, 1 tablespoon of extra virgin olive oil, dried oregano, and a pinch of salt and pepper to create the dressing.
Pour the dressing over the quinoa and chicken mixture. Toss gently to combine all ingredients evenly. Taste and adjust seasoning as needed.
