Instructions

While the Bolognese is simmering, prepare the béchamel sauce. In a small saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute, forming a roux.
Gradually whisk in the warm milk, stirring constantly to prevent lumps. Continue to cook, stirring, until the sauce thickens. Season with a pinch of nutmeg, salt, and pepper. Remove from heat.
