Meatloaf
- 750 gground beef
- 250 gground pork
- 1 largeonion(finely chopped)
- 2 clovesgarlic(minced)
- 150 gstale bread(soaked in milk, then squeezed dry)
- 100 mlmilk
- 2 largeeggs
- 2 tbspfresh parsley(chopped)
- 1 tspdried thyme
- 1 tspsmoked paprika
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(freshly ground, to taste)
Glaze
- 3 tbspDijon mustard
- 2 tbspbrown sugar
- 1 tbspWorcestershire sauce
- 1 tbspapple cider vinegar
- 1 tbspfresh rosemary(chopped)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
In a large bowl, combine the ground beef, ground pork, chopped onion, minced garlic, squeezed bread, milk, eggs, chopped parsley, dried thyme, smoked paprika, salt, and black pepper. Mix thoroughly with your hands until all ingredients are well combined, but be careful not to overmix, as this can make the meatloaf tough.
Shape the meat mixture into a loaf and place it in the prepared baking dish.
In a small bowl, whisk together the Dijon mustard, brown sugar, Worcestershire sauce, apple cider vinegar, and chopped rosemary to create the glaze.
Spread about half of the glaze evenly over the top of the meatloaf.
Bake for 45 minutes. Then, remove the meatloaf from the oven, spread the remaining glaze over it, and return it to the oven for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C) and the glaze is caramelized.
Once cooked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute, ensuring a tender and moist meatloaf.
Slice and serve warm with your favorite sides like mashed potatoes or roasted vegetables.
