For the Yogurt Sauce
- 200 gGreek Yogurt
- 1 cloveGarlic
- 1 tbspLemon Juice
- 1 tbspFresh Dill, chopped

For Serving
- 4 piecesFlatbreads or Pita Bread

Instructions
Cut the chicken thighs into thin strips. In a bowl, combine the chicken with olive oil, smoked paprika, cumin, coriander powder, garlic powder, cayenne pepper, salt, and black pepper. Mix well to ensure the chicken is evenly coated. Cover and refrigerate for at least 30 minutes, or ideally 2-4 hours, to marinate.
While the chicken marinates, prepare the yogurt sauce. In a small bowl, combine Greek yogurt, minced garlic, lemon juice, and chopped fresh dill. Season with salt and black pepper to taste. Stir until well combined. Cover and refrigerate until ready to serve.
Preheat a large skillet or frying pan over medium-high heat. Add the marinated chicken strips and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Ensure there is no pink remaining.
Warm the flatbreads or pita bread. You can do this in a dry skillet for about 30 seconds per side, in a toaster, or in a microwave for a few seconds until soft and pliable.
To assemble your döner kebab, spread a generous amount of the yogurt sauce on the warm flatbread. Layer with shredded lettuce, sliced tomatoes, red onions, and cucumber. Add a good portion of the cooked chicken strips.
Fold or roll the flatbread to create a wrap. Serve immediately and enjoy your homemade döner kebab!
