- 4 cupsVegetable Broth(warm)

Instructions
Heat olive oil and butter in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the chopped shallot and cook until softened, about 3-4 minutes.
Add the minced garlic and sliced mushrooms. Sauté for 5-7 minutes, until the mushrooms have released their liquid and started to brown.
Stir in the Arborio rice and cook for 1-2 minutes, stirring constantly, until the edges of the grains appear translucent.
Pour in the white wine and stir until it has almost completely evaporated, about 2-3 minutes. This adds a wonderful depth of flavor.
Begin adding the warm vegetable broth, one ladleful (about 1/2 cup) at a time, stirring constantly until each addition is almost fully absorbed before adding the next. This process should take about 20-25 minutes. The risotto should be creamy and the rice al dente.
Once all the broth is incorporated and the risotto has reached your desired consistency, remove it from the heat. Stir in the grated Parmesan cheese, salt, and freshly ground black pepper to taste.
Let the risotto rest, covered, for 2-3 minutes. This allows the flavors to meld and the risotto to become even creamier.
Serve immediately, garnished with fresh chopped parsley and extra Parmesan cheese, if desired. Enjoy your heavenly mushroom risotto!
