- 200 gpotato starch

- 1 Lwater(for boiling)
Instructions
Wash the potatoes thoroughly and boil them in their skins until tender, about 20-25 minutes. Once cooked, drain the water, let them cool slightly, and then peel them.
While the potatoes are still warm, press them through a potato ricer or mash them very finely with a fork until no lumps remain. Transfer the mashed potatoes to a large bowl.
Add the potato starch, salt, pepper, and optional nutritional yeast to the mashed potatoes. Mix everything together well until a smooth, pliable dough forms. Do not overmix, as this can make the dumplings tough.
Bring a large pot of lightly salted water to a gentle simmer. Meanwhile, with damp hands, form the potato dough into small, uniform dumplings, about 2-3 inches in diameter.
Carefully place the dumplings into the simmering water. Do not overcrowd the pot; cook in batches if necessary. The water should not boil vigorously, just gently simmer.
Let the dumplings cook for about 15-20 minutes. They are ready when they float to the surface. Remove them with a slotted spoon and serve immediately with your favorite vegan gravy or side dishes.
