- 1 tbspVegetable oil
For Sauerkraut
- 1 mediumOnion
- 1 cloveGarlic
- 125 mlDry white wine
- 125 mlVegetable broth
- 1 tspCaraway seeds
- 1 pcBay leaf
- 3 pcJuniper berries
- 1 pinchSugar(to taste)
Seasoning

- 1 pinchBlack pepper(freshly ground, to taste)
Instructions
Preheat your oven to 350°F (175°C). Pat the smoked pork loin dry with paper towels.
Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the pork loin on all sides until nicely browned, about 5-7 minutes. Remove the pork loin and set aside.
In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
Deglaze the pot with white wine, scraping up any browned bits from the bottom. Let it simmer for 2 minutes.
Add the drained sauerkraut, vegetable broth, caraway seeds, bay leaf, and juniper berries to the pot. Stir well. Season with a pinch of sugar, salt, and pepper.
Place the seared smoked pork loin on top of the sauerkraut. Cover the pot with a lid and transfer it to the preheated oven.
Bake for 45-60 minutes, or until the pork loin is tender and cooked through. The internal temperature should reach 145°F (63°C).
Once cooked, remove the pork loin from the pot and let it rest for a few minutes before slicing. Discard the bay leaf and juniper berries from the sauerkraut.
Slice the smoked pork loin and serve it with the savory sauerkraut. Mashed potatoes or boiled potatoes make excellent side dishes.
