- 2 tbspVegetable oil
- 2 largeOnions(finely chopped)
- 3 clovesGarlic(minced)
- 3 tbspSweet paprika
- 1 tspHot paprika
- 0.5 tspCaraway seeds
- 1 tspMarjoram
- 400 gCanned diced tomatoes(undrained)
- 500 mlBeef broth
- 1 tbspTomato paste
- 1 largeBay leaf
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(freshly ground, to taste)
Instructions
Pat the beef cubes dry with paper towels. Season generously with salt and pepper.
Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the beef in batches on all sides, ensuring not to overcrowd the pot. Remove the browned beef and set aside.
Reduce heat to medium. Add the chopped onions to the pot and cook, stirring occasionally, until softened and translucent, about 8-10 minutes. If necessary, add a splash more oil.
Add the minced garlic, sweet paprika, hot paprika, caraway seeds, and marjoram to the onions. Cook for about 1 minute, stirring constantly, until fragrant. Be careful not to burn the paprika.
Stir in the tomato paste and cook for another minute. Pour in the diced tomatoes and beef broth, scraping up any browned bits from the bottom of the pot. Bring to a simmer.
Return the browned beef to the pot. Add the bay leaf. Bring the goulash back to a gentle simmer, then reduce the heat to low, cover the pot, and let it simmer for at least 2.5 to 3 hours, or until the beef is fork-tender. Stir occasionally to prevent sticking.
Once the beef is tender, remove the bay leaf. Taste and adjust seasoning with salt and pepper as needed. If the sauce is too thin, you can uncover the pot and simmer for a bit longer to reduce.
Serve hot, traditionally with egg noodles, mashed potatoes, or crusty bread.
