- 500 gPotatoes(cooked and cooled)
- 200 gBacon(diced)
- 2 mediumOnions(finely chopped)
- 4 largeEggs
- 50 mlMilk
- 1 tbspButterMilch

- 1 Prise(n)Black Pepper(freshly ground, to taste)
- 2 tbspFresh Parsley(chopped, for garnish)
Instructions
Peel the cooked and cooled potatoes, then cut them into roughly 1/2-inch cubes.
In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.
Add the finely chopped onions to the skillet with the bacon fat and sauté until translucent and lightly browned, about 5-7 minutes.
Add the cubed potatoes to the skillet with the onions. Increase the heat slightly and fry the potatoes until golden brown and crispy, stirring occasionally, about 10-15 minutes. If needed, add a little butter or oil.
While the potatoes are frying, whisk the eggs with milk, salt, and pepper in a medium bowl.
Once the potatoes are nicely browned, return the crispy bacon to the skillet and mix well with the potatoes and onions.
Pour the egg mixture evenly over the potato and bacon mixture in the skillet. Reduce the heat to low, cover the skillet, and cook until the eggs are set, about 5-8 minutes. Alternatively, you can stir gently to scramble the eggs with the potatoes.
Serve the Hoppel-Poppel hot, garnished with fresh chopped parsley.
